Southwest BBQ Lunch

Last Friday, I had the honor of catering a small lunch for several of my guy’s wonderful coworkers.

As part of the United Way Day of Caring, the group spent the day volunteering at Little Bit Therapeutic Riding Center. Little Bit is an amazing organization providing equine therapy for kids and adults with disabilities. The kiddos and adults get exercise riding the horses, and it helps them gain so much confidence and independence. And, of course, they receive lots of unconditional love and nuzzles from the sweet horses at the center, who are loving it, too.

The volunteer group did a bunch of much-needed chores around the property: sweeping, mopping, dusting, scrubbing windows. Hungry and dusty, they piled in to the small portable building and filled up family-style before heading back to clean and remove nails from a slew of horseshoes (they then painted them gold so that Little Bit can sell them at future fundraisers).

It was a pleasure to whip up lunch for these folks. Thanks to my guy’s coworker Jen for thinking of hiring me and allowing me the honor!

Southwest BBQ Lunch

  • BBQ Chicken Sandwiches
    Tender chicken slow-cooked in a zesty homemade BBQ sauce, then hand-pulled and served over crusty sandwich rolls.
  • Sweet organic bread & butter pickle slices
    I didn’t make these. They’re from Trader Joe’s, and they’re delicious.
  • Southwest Caesar Salad
    Romaine lettuce tossed with fresh corn kernels, black beans, tomatoes, and parmesan cheese, then topped with tortilla strips and tossed with a creamy chipotle dressing.
  • Tortilla Chips with Homemade Salsa (recipe coming soon!) and Guacamole
  • Fresh Fruit Salad with Honey-Lime Dressing
  • Big Ol’ Cowboy Cookies (recipe also coming soon!)

    This lunch was absolutely delicious! The pulled chicken BBQ had a complex, tangy flavor. I kept eating bite after bite… what is that flavor? Is it sweet? Maybe, but it’s rich and tangy also. Maybe another bite… I love fruit salads and this one was (to me) perfect for fall! The honey-lime dressing brings out the bright flavors of the fruit instead of (like some of those awful miracle-whip abominations) overpowering it. And the Cowboy cookies! Oh God the cookies! Chewy, chocolatey, oatmealy wonderfulness! To gather over such a lovely meal made the day that much more enjoyable. Much Gratitude to the lovely Mrs. Hazel Bloom for the gorgeous spread!

    Little Bit is SUCH a great place!! I don’t know for sure, but I believe the horses they use for therapy, are ‘Premarin Babies’, so have essentially been rescued themselves. :) We do riding therapy with Braeden, but use our own horses, and his pony.
    It’s so great to hear that your husband’s company volunteered there. Kudos to them!! The food looks like it was delicious!
