Blueberry Pancakes

Every home cook needs a great blueberry pancake recipe in his or her repertoire. It’s a requirement! I’m telling you!

I mean, what’s a lazy Sunday summer morning without blueberry pancakes? No fluffy butter-and-syrup-soaked goodness packed with bursts of sweet blue perfection? Why, that’s just wrong.

Okay, so maybe I’m going a little overboard.
Actually, maybe not.
Either way, here’s my blueberry pancake recipe, a.k.a. Sunday morning nirvana; but I’m pretty sure they’re just as delicious any day of the week.
Blueberry Pancakes
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups buttermilk
- 3 tablespoons unsalted butter, melted
- 2 eggs
- 3/4 teaspoon vanilla
- 1 cup fresh blueberries
Directions:
- Heat your griddle to about 325 to 350 degrees or place a large frying pan over medium heat.
- In a large bowl, mix together the flour, baking soda, baking powder, salt and sugar.
- In a medium bowl, mix together the buttermilk, eggs, vanilla and melted butter.
- Pour the wet ingredients into the dry ingrediengs and whisk together just until incorporated. A few lumps are okay; it’s better to make sure you don’t overmix!
- Add a little bit of butter to your griddle or frying pan, so the pancakes don’t stick.
- In 1/3 cup increments, pour the pancake batter onto your griddle or frying pan.
- Sprinkle several blueberries over the pancake circles.

- When the edges start to look dry and the batter starts to bubble, flip it over.
- Continue to cook until both sides are golden brown and the pancake is cooked through.
- Serve with butter, maple syrup and a few more fresh blueberries sprinkled over the top.
- Enjoy!

When I was a kid I loved the prepackaged blueberry waffles and pancakes. Ive never revisited them as an adult – maybe its about time because these look great.

These look LOVELY! I hope you are making them again this Sunday at that the sun is out. These look like they should be eaten sitting on a back porch with the sun and a cup of coffee.
